Broccoli & Cheese Bites

Ingredients:
6 ounces of cooked broccoli
1 cup of Italian breadcrumbs
1 1/2 cup of shredded cheese
3 eggs
Salt, pepper and garlic to taste
Preheat your oven to 375 degrees.
Cook broccoli until soft
Combine your Broccoli, breadcrumbs, 1 - 2 cups of cheese,
3 eggs and seasoning of your choice into a large bowl.
Mix together, create small patties, (the smaller, the crispier they get) place on a parchment lined baking sheet.
Bake at 375 degrees at 20-25 mins. Flip halfway through.
Remove from oven and let cool for a few minutes. Serve with your favorite dipping sauce!

Roasted Cranberry & Goat cheese Flatbread:
An easy and unexpected holiday appetizer. Flatbread pizzas made with cranberries, thyme, shallot and fresh goat cheese.
Prep Time: 15 minutes
Total Time: 35 minutes

Ingredients
1 ½ cup fresh cranberries
3 tablespoons dark pure maple syrup
1 tablespoon finely chopped shallot
½ teaspoon chopped dry thyme
¼ teaspoon salt
2 Stonefire flatbreads, (14.1 oz package)
1 4-ounce package fresh goat cheese, crumbled
Preheat oven to 375 degrees F.
Mix cranberries, maple syrup, shallot, thyme and salt in an 8 by 8-inch baking dish. Roast, stirring once or twice, until the cranberries burst and the mixture is bubbling and caramelizing along the edge, about 15 minutes. Remove from oven and stir until the cranberries are broken down and the mixture is thick. Set aside.
Lay flatbreads out on work surface. Spread the hot cranberry mixture over the flatbreads, dividing evenly. Top with the goat cheese. Bake directly on the oven rack until the cheese is softened and flatbread is crispy, 8 to 10 minutes. Cut into 8 small wedges or strips each.

Baked Brie with Sun Dried Tomatoes

Brie
Sun dried tomatoes
Parsley
Garlic
Chop up the sun-dried tomatoes and garlic while the oven is heating up, throw them on top of a wheel of brie, and stick it the oven.
While it’s in the oven, chop up a little bit of parsley. Cook the brie until it is soft and starting to ooze, then add the parsley and your appetizer is done!
